check with your theme customization section for collection page.
It will be having option for editing button text.

Unfortunately there is no option. I can turn the button on and off, or change the colors, however, there is no option to change the text.

Anyone know If It is possible to edit the text through the theme code?

Search this class in your index.liquid file or home page file where the home page code is there.
Search this :
Shop Now >
Then change the text here!
