Is there a way to change the Viva Wallet text, tried to change from Theme Content → Checkout & System
but there is no option for Viva Wallet Label.

You could try with the Kip: Customize Payment Methods app, because for what i understand, to modify that text without an app, you need to be a Shopify Plus merchant.
After installing the app, you need to select the “Create rename rule” option:
Then enter the payment method name that you want to change, in you case should be “Viva Wallet Smart Checkout”:
After that you can set a condition to apply this change, if you want, save the rule and it’s done! You can see the new name in your checkout.
