I have reached my 100 variants. I would like to take some of these out of this product category and create a sub category. All of these products are different.
I want to create a sub product category for “Retired” items. Is this possible. I think this will free up my varants.

It sounds like your best bet would be to create an automated Collection for your retired items and use specific conditions to generate the Collection. Here are the details on how to accomplish that.
That being said, it wouldn’t free up your variants unless you recreated those specific variants as their own individual products and removed the specific variant from it’s original product.
An alternative option to this would be the use of third-party apps to create more variant options. There are many options depending on whether you need basic selections, color swatches or sizing options. If you can specify what type of variants you need to display then I would love to help narrow these app choices down for you.
