I have nearly 6000 items in my shop and would like to optimize the SEO for each without visiting each product. I’m not sure if that’s the best approach.

If that is your goal, consider using tools that offer setting up rules.
For example if you want to change the titles using automation, then use a tool like multifeeds to use your title, then add other details to it.
But ultimately, you still need to know what data to use. But if you have in your store, that is great, such as in custom metafields then you can use multifeeds to add this data.
If you don’t have any data to optimize, then you can look at tools such as producthero. Or in my case I have developed my own tools to improve data.
But if you can not use other tools, then focus on your top selling products ie 5% or 10% of the top sellers. This will allow you to focus your efforts on these to further enhance the data.
You can also setup rules in Google Merchant Center, but again, here you need to have the data in the first place.
My advise to you, focus on your top sellers and improve it.
Or use a tool to enhance your data, if you don’t want to manually edit data.
