We are a small company with websites for different regions, all looking at the same SOH. When an item is sold (prior to dispatch) the site internally decrements the stock. The other sites can oversell as they are looking at the undecremented SOH. How I can resolve this, please?

I am happy that our SOH will be reduced as items are allocated.
We could take 2 or 3 days to ship if an order comes in on a Friday night of a holiday weekend. If the SOH is reduced we won’t oversell however we could undersell on the site which has decremented its sale. Is there a way to avoid this? For example, Shopify not internally decrementing?

I guess you should create new status event at SOH for order booking.
SOH will block the quantity whenever order accepted by any region.
SOH will release the block quantity if order gets cancelled or any other event which needs restoration of stock.
