Sorry to hear about the experience.
I know Shopify keeps the data for a period of time, and you can recover deleted account by logging in and selecting any of the plans. Also to handle this, you either reply to Shopify’s email notifying you about your store deletion or you can contact Shopify’s Support Team Here.
