How can I remove the email marketing checkbox from checkout AND subscribe customers to my emails?

This is legal in Canada, and it stands to reason to me - if you purchase something from a brand, then you’re reasonably interested in that brand!

So, how can I remove that pesky checkbox from the checkout process and still get my paying customers on my email list?

Note: customer accounts are optional on my site and I’d like to keep it that way.
