Some themes offer an option to remove SKU or barcode, look for it when customizing your theme.
If that`s not the way to do it, then go to Edit Code → search for Cart.liquid or something similar, press Ctrl+F and type SKU. Delete that part and save.
Before doing any changes, duplicate your theme.
