How can I replace the quick add button with a quantity selector?

Hi I need help with the :

  1. Quick Add button - would like to dynamically replace the quick add button to a quantity selector once the add button is selected.

[ Have attached references below ]

  1. Additionally, I would like to disable the pop up every time a product is added to cart

Any and all help is much appreciated
