How do i resize my cover image. WHERE can i find the image editor? Also, what size should images be, like the cover image, product images, thumbnails, collections etc.

Great questions! Accessing your image editor is easy:
There’s more information on the image editor itself, but it’s generally good practice to upload your images in the best quality and optimum sizes from the start. We have a guide with best image practices outlining that and much more.
Now, when you say “cover image” are you referring to the image banner? You can choose what size you want your image banner to be in your theme customizer:

NO Andrew…This the type of mumbo-jumbo that I hate about Shopify. Simply tell me in plain english what size my banner image should be. For example 1000x500 pixels etc. Instead y0u give me 5 pages of confusing text to read through.
I appreciate your desire for a simple answer, but when it comes to designing a store - particularly given that your theme is mobile responsive - there isn’t one.
Image banners, sometimes referred to as hero images, should be at least 2048 pixels, and of the highest quality:
