hello, I have created an email address in shopify of the type info@store.com and I have redirected it to my personal gmail account to receive in it the emails. I would be grateful to know how I can respond to my customers using the address info@store.com
You cannot if you are using the Gmail account. Even you change the Bcc, it will go back to the gmail email that you assigned. But if you send email using Shopify, you can assign the Bcc and it should be received using the email that you want.
To see this, go to your customer file, and click the email, and it should show the pop up below
