I have seen the change made on other Shopify sites but can’t find where to make the change. Thanks.

Reserved paths are how URLs are structured within Shopify to provide a uniform experience for our users. This also makes it easier for us to implement changes through our end and make identifying sources more simplified. These cannot be changed.
Both examples of URLs you provided show reserved system paths. One is the reserved path for collections seen as /collections and the other is a reserved path for products seen as /products. Which path will display depends upon how the product is being accessed.
Let’s say for example you viewed the product link by going through the collection, or using the collection URL then you will see the longer link. If, however, you use the direct product link the shortened version will appear. Either way - both would work!
