For new customers you’ll want to add custom fields to the registration form to tag your customers, search for ‘custom registration form / fields’ apps that include the tagging feature
Existing customers can probably be updated in bulk with a spreadsheet file from the customers dashboard in the Shopify admin, so I’d ask Shopify directly
