I have seen other people post about this issue but none of the proposed solutions work for me. I have waited 24 hours to see if the list of collections updates. I have made sure that they are all set to be available in the online store. Any suggestions about how to fix this?

The reason why you’re unable to see most of your collections under the Organization section of the product page in the admin is because you have automated collections. Only manual collections, such as your Home page collection, will appear in the Organization section.
Products cannot be manually added to automated collections as automated collections use conditions based on product attributes. If the product matches the conditions of an automated collection, it is automatically added there and doesn’t need to be manually added.
Seeing that your automated collections use product tags as conditions based on the screenshot you shared, you can assign the appropriate tags to relevant products so the products are added to their collection. You can add tags through the Tags section found in the Organization section.
Since the product you’re currently editing has the Sweatshirt tag, it should now be in the Women’s Hoodies & Sweatshirts collection. If it doesn’t appear there, there’s a possibility the products are set to match all conditions. If they are set to match all conditions, your product in this case should have both Hoodies and Sweatshirt tags. If you want products that either have the Hoodies or the Sweatshirt tags to appear in the collection, the products must be set to match any condition. This can be adjusted within the collection page in the admin, under the Conditions section, as we can see in the screenshot below from a test store.

High-quality photos, informative product descriptions, and helpful information are key things that can push customers to place orders. Because your collections are automatically added products with different tags, so you can’t manually add products to it. You can check by creating collection with the Manual type, it will show the collection for you to add products. Please check this: https://i.imgur.com/qzXMFkM.png
With Automated, it will automatically add the product, you can’t find its collection at the Product’s Collections. Hope it is clear to you.
