Auto-tagging on products is not a feature built into Shopify, therefore, you are likely using a third-party app to achieve this functionality.
There are a variety of apps that offer this service, however, it’s tough to be certain which one you are using and how to disable it without a deeper look at your account. If possible, please share a list of your current apps with me and I can then help you look into disabling this functionality or thoroughly uninstalling the app going forward.
Find a list of your installed apps by logging in to your store and heading to Admin > Apps .
