If by auto-tagging you meant the blue tags, those are not tags as such, but displayed information about the collections in which this product is referenced. Those can be automatic collections, which means that a product can be automatically assigned to a collection if it matches the conditions. So I would make sure the automatic collections that are displayed are correctly configured, so that they only include the products they need.
