Is it possible to turn off the standard email notifications in the settings, and only use custom emails via services like SendGrid?
I’d prefer using webhooks and SendGrid, over writing the templates in liquid.
Does anyone have any experience doing this? If it’s possible, how do you turn off the sending of the default notifications?
More broadly, how do most big/headless stores tackle this issue?

This is a great question, thanks for posting!
While I’m not familiar with SendGrid, there are a few email apps available in the Shopify App Store that allow you to fully customize your email notifications.
Two great examples of this are Mailchimp and Klaviyo. While Klaviyo won’t override the notifications and send them instead, they do provide you the code after you have finished customizing to add to your Shopify notifications. For full details on how this works, you can check out their guide here.
