I’m trying to user the new Custom fields in shopify but i’m not quite sure how to use specific fields so the customer can send me specific request.

Yes, it is possible with some custom codes.

But need more detail as what information you want from customer.

Please elaborate your requirement in detail.

Also you want to try by yourself of want to hire someone?
