I did find this.
In Sales Channels is an item Online Store. Tap that, under that is Pages. Select a page, at the bottom of the page’s definition is its Metafields.
Apparently, product pages are not “pages” … only things defined by the user via “add a page” from this “Pages” .
Confusing, but I do think it’s working for me. Cheers jb
