So instead of your products page being first or your navigation taking you to all products you would rather have something like?
Men
Women
Then under Women
–>Jewelry
–>Clothes
–>Accessories
Then when the menu expands
Jewelry
–>Necklaces
–>Earrings
–>Sets
Clothes
–>Dresses
–>Tops
Each of your products has several qualities that will let you categorize them. Words in the title, vendor, tags, and product type are the most often used. Categories are “Collections” in Shopify
For the Dresses category your products that are dresses would need to have one or more of the qualities.
It is best to start with the lowest category/collection and then preview what it looks like to see if you’re on the right track. You may need to add tags to your products to get them to fall into the correct collection
Make a new category from the Products–>Collections are in admin
then Create Collection
you’ll see a ‘CONDITIONS’ area. This is where you specify what product goes into a collection
Your product, say, a dress, should have the tags, women, red, clothing. A watch might have the tags, women, men, accessories, gold. These are suggestions - you need to make up your own schema for how you’ll organize your products into categories.

I’d definitely recommend using parent categories like Men, Women, Kids, then nesting collections underneath (Women → Clothes, Jewelry, Accessories). I implemented this setup on my Shopify store https://toynix.pk, and it made the menu cleaner and more conversion-friendly than showing all products first.
