How do I get apps to the unpublished 2.0 version of our theme?

I will first throw out there that I am not a shopify pro and am still learning. lol I am needing clarification on how I get apps over to the unpublished 2.0 version of our theme…

We have a vintage theme that had the option to upgrade to the 2.0 version. So I installed and am editing (unpublished) to mirror our live vintage theme. The basics are good to go. But I am thoroughly confused on how to add all the apps we use before publishing it? I was told that they have to be re-added. So what exactly does that entail? Does this mean I have to publish the 2.0 theme, and then go find, install, and set up all of our apps again, while it’s live?!

I’m sure this is simple and I am just not connecting the dots. Any advice or direction would be much appreciated.
