Hello, i want to to set “demo purchse”.
I live in Israel so Shopify Payments is not avaliable in my country and i don’t picked third-party providers yet. ( I don’t see the Manage button )
help please!

You are correct, Shopify Payments is not available in your location as of yet, however, here is a list of alternative gateways you can connect with. Worldpay, 2Checkout and Paypal would be the most commonly used gateways.
If you would like to test your gateway, you can place a test order using our Bogus Gateway as mentioned in this guide instead.
