We sell charcuterie serving boards. Each product is a one-off item, meaning we don’t create multiples. Each product listing has one item. All of the items are different sizes and weights. They range from 4" to 36" long and ounces to pounds. I’ve tried several scenarios in shipping setup, but noticed that when I add several items to the cart, the shipping either doesn’t increase at all or ends up being like 40% of the cost of the items — neither of which will work. How do i set this up to pay an accurate amount for the shipping of items?

you can provide an approximate rate at checkout using the weight of the package and provide accurate dimensions when generating the shipment.
Alternatively, you may need to consider an app that supports box packing using dimensions as well.
Have you tried using shopify custom shipping profiles? I think those could help you.
Yes, but when multiple products are added to the cart, it is either too little or too much.
