Do you happen to be using any apps that automatically generate and send invoices?
Otherwise, the emails you described sound like they could be your abandoned carts notification. As the name implies, if a customer puts products in the cart, and takes it to checkout but never completes the purchase, it is possible to send them an abandoned cart email prompting them to finish their order.
You can manually send an abandoned cart email or you can configure your store to send abandoned cart emails automatically (by going to Settings > Checkout) to either anyone who abandons their checkout or just email subscribers.

If customers who visit your store are receiving automatic invoices for their purchases, it is likely that the invoicing feature is enabled in your Shopify store’s settings. To disable this feature, you will need to go to your Shopify admin panel and navigate to the “settings” and then “Checkout” option.
In the Checkout settings, look for the “Order Processing” section, you will find an option called “Automatically fulfill the order’s line items”. This option if enabled will automatically send the invoice after the order gets processed. Turning it off will stop the automatic invoicing.
It is important to keep in mind that disabling the automatic invoicing feature may affect your store’s order fulfillment process, so it’s a good idea to test it before making any changes in the live store.

Thank you for the guide, but the item presented does not appear in our menu, so the issue being addressed here—one we would also like to resolve—cannot actually be solved with this approach.
