You do have collection Products, but your “Catalog” link in the menu points to /collections/all which is not a full collection by default and you can’t set sort there.

Update: – if you create a new collection called “All”, it will replace the pseudo-collection displayed at /collections/all and you would be able to set sort order on that one in back-end.

I’m using the Horizon theme. Nothing on checklist solved it, FYI
