I reached out to our technical team who have confirmed that when a shop has over 50,000 variants, the number of variants that shop can create a day is 1,000. If this limit is exceeded, then an error is displayed, and merchants need to wait 24 hours before adding variants by using an app or CSV file import. Shopify Plus stores are exempt from this limit as stated in our guide below:
If non Plus store merchants were wanting to exceed this limit, they can apply for an exemption although there are quite strict criteria that must be met to do so. Note that this is different from the 100 variants per product limit, and that limit cannot be changed.

No issues yet - I have a new client who has plans to scale up to/past 50,000 within a year and ideally in the high 6 figures+ over time. If Shopify Plus is an option to do this then that is great, as they grow into the platform there are options available.

Hi Moira, I would like to appeal to increase the daily limit for variant/product creation on my store. How can I do this/what is the link to appeal?
Store details: My store sells product components, so I am uploading both the product and the parts to make it so my customers can mix and match. I expect to need to upload ~250k more variants across ~145k products and would like to have this up a few weeks before the December holidays. I currently have ~51k variants across ~21k products.

Otherwise, we can suggest incorporating dedicated 3rd party apps that are able to schedule large updates/imports and automate them (“break them down”) in daily chunks within our regular 1000 variant/day limit like Matrixify, see this example from their documentation here.
