I want to add one where, when a letter is clicked, a visitor is taken to the first category starting with that specific letter. All in the same webpage.

Which theme you are using. can you share which code you used to show all pages link their. then we can help you to alter this code. In dawn theme their is no block to print all link. Did you insert them manually or custom code in theme.
