I have a client who is running her wholesale website here:
She wanted to add an option of a checkbox when they are checking out that the customers can click if these items need to be set aside for dropshipping for them. I now know that I cannot do that with the plan she is on.
Is there a way to add code so that one checkbox to the cart labeled dropshipping but that isn’t required to be selected to checkout?

Yes. I saw this tutorial below that allows you to add a terms & conditions checkbox to the cart page and I wasn’t sure if there was a way to do the same thing but with ‘dropshipping’ next to it and not make it required to move onto the checkout.
