I want to add a banner saying “Coming soon” since we are not selling the dresser yet. How do I add this feature? Or change “sold out” to coming soon?

Depending on theme makes sure to check the theme’s docs, some premium themes have a convention for tags or metafields to create custom badges.
If that is not a feature, and if “sold out” can be changed for EVERY sold out product , then just change the wording (locale translation)

Otherwise an advanced theme customization is need to add custom business logic and or specific theme settings; or find a suitable app.

If you’re using a Shopify made theme, you might be eligible for Shopify’s Design Time. Design Time is 60 minutes of coding changes to Shopify made themes that you can submit to our support team here. Write “Design time” in the chat > Click “I still need help” > Then follow the prompts to be connected to an advisor.
If you aren’t eligible for Design Time, or you’ve already used your 60 minutes, you can look at hiring a Shopify Partner to make this change for you and any other customization changes you’re looking to make. Check out our Shopify Partners directory here.

By exploring this app, you can follow these steps to generate a “coming soon” badge for your item:
Step 1: Install and integrate the application.
Step 2: Proceed to the “Badges” section, create a text badge, input content, and tailor the badge to align with your brand.
Step 3: Within the Product settings, select the Inventory status as “Out of stock” to display the badge for upcoming products (with a quantity of 0).
Step 4: In the General settings, choose pages to display the badge and more.

Besides adjusting your theme settings on Shopify that you have already been suggested, you can also use a Product Label app to add a “Coming Soon” badge or replace the “Sold Out” label. You can visit the Shopify app listings and search for keywords like ‘Product laels’ or related terms. You’ll find a list of product label apps there.
However, if you’re looking for a suggestion, I personally use and highly recommend DECO Product Labels & Badges by Smartify Apps. Just click to “Create Product Labels” on the Dashboard and follow the instructed steps to create the badge you want. This app also allow you to upload customized image which can match and show your brand’s identity. You can refer to the following image for your reference.

Addendum another approach is to visually add the badges into the product images/media itself.
For the featured-image this has the major upshot of working in multi-channel scenarios.
There are apps like superwatermarks to aid editing badge graphics into images
, or conversion apps like modemagic that can do that in bulk(see their help docs for product-badges)
