Showing personalized engraving options in a popup and including product name variables in the button text would require some custom work.
An alternative is to use the Easify Product Options app, which allows you to create custom options quickly. Here’s a demo that could work for your case

Notes: If the engraving cost varies between products, you can create separate option sets with different engraving costs and apply them to the relevant products.
