Currently my collections are automatically sorted according to best sellers/old to new. I would like to know how to switch from new to old automatically in all collections.

This is Shopify’s default. So to change it, you need to change the code in your theme. We suggest you hire a Shopify expert or you can choose the Manually option to adjust it yourself to suit your needs.
