How to best manage product availability and track changes on your product page?

Two ideas for the Product Page:

Idea One: I’d like to turn variants off & on depending on availability. WHY? So I don’t have to recreate the variant again should it come back in stock. My current work arounds: 1. delete the variant (only to have to rebuild it later) or 2. Leave it, but reorder it to the bottom and just allow it to be out of stock for long periods of time.
Idea Two: Why is there no timeline comments section?
This would be dreamy. Anytime myself or a team member makes a change on the product page, I could see the history of changes. I’d prefer it to be a manual entry… Jennifer changed cost of goods from 8.98 to 9.98 to reflect vendor increased costs in most recent order. Sherri removed the photo of the cat on the roof, because we felt it was off brand. Jennifer removed the 4-pack variant in favor of adding it to Frequently Bought Together.
It could like the comment section on the order page. PLEASE. Please.

Variant idea would be great! I would love the timeline/comment section for Product pages as well!

I would find it useful to remind myself of notes regarding price changes/specials on certain dates or why it was made unavailable like “No Stock Currently Available”.
