We’re moving one of our brands from WSM to Shopify. Am I correct in adding the Shopify URL’s to the URL Redirects on WSM? I exported the WSM URL Redirect sheet on WSM and am adding the URL from the shopify store we’re building. And when we’re ready to switch, I’d just need to upload that sheet to WSM and change our domain on WSM to the new domain, correct?

You need to set 301 url redirection according to shopify url. Also you need to update shopify sitemap.xml in search console.
