I am helping out a friend with their Shopify Store that sells candles.
We want to add the option for customers to create their own bundles for products on the site. Maybe 2-3 items in a bundle. I want the product page to show 3 different drop down menus that have products from the same collection in each menu.
You need to use a third-party app to create such kind of bundle. you can try MultiVariants ‑ Bulk Order App. Add the collection of the products as variants in Shopify and then through the app you can set the bundle limit so that customers choose exactly 3 products for example from the list. The only difference will be the display style. You want it in Drop down, but MultiVariants will show it in an open list with a quantity field for each variant so that customers can choose different quantities of a variant. Although the UI might look slightly different from what you’re aiming for, I’d still recommend checking out the Bundle Page (or also called Page Builder) feature.

If you’re trying to build a “pick 2–3 items from the same collection” bundle (like the example page), another option worth checking is app for shopify.

require customers to choose 2 or 3 items,

You can absolutely create a “Mix & Match Bundle” with 2–3 dropdowns just like the example you shared — and you can do this very easily using the Easify Product Options app, without writing any code or relying on complicated bundle apps.
