What is the best way to get a drop down or selection? My shop sells DIY drip bear kits and each bear requires the customer to choose 2 or 3 paint colours.

The simplest option here might be to install one of the product options apps from the Shopify App Store. There are both free and paid options available. Several include both drop-down menus and color swatches.
