Hi there.. I’m currently looking for an app or something that puts an overlay over my product photo, like a banner on the corner ect that says how many items are in stock..
Just a plain banner that says ‘8 in stock’ ect

There is an app called EasyStock Stock Product Labels that I think will suit your needs. They will allow you to create badges that go over your products on both the product level and collection level. In addition, the badge positions are configurable to your preference.
They offer a 7-day free trial and is then $4.99/mo afterwards.
