After updating it from Preference tab, you gotta wait for a while to let it get updated on Google search engine because as far as I know the updates on Google search engine are not instant. Plus, updating is from Preference is the only way so you just have to wait.

Update the meta description in Online Store > Preferences, then check if it appears in your site’s source code (Ctrl + U). If it’s correct but not updating on Google, request reindexing via Google Search Console and wait for Google to update it. Let me know if you get this done.
