Hi! Sorry, but there’s no way to hide the unavailable options with the theme settings as they are. Such options show as crossed out and greyed out and, as an indicator of the non-existing variant, the ‘Add to cart’ button changes to ‘Unavailable’. That’s how the regular ‘Variant picker’ block works in Shopify, and themes from the theme store are not allowed to alter this block’s configuration. You can achieve what you need with custom code, but, I’m afraid, I can’t help you with such customizations as that’s beyond our support.
