I have started a luxury handmade press-on nail business, and I’m looking for some assistance with my site. I won’t have much inventory on hand (if any), and most of my items for sale will be custom-made. I want customers to be able to choose their nail shape and level of design, and then in a comment box (or something similar) give me details of how they want their nails to look. The only time I may have inventory is if I happen to set up at a pop-up shop, and I need to create sets for that, but that’s much further down the road. Is there a way to list all of my variants (shape, level of design, price) without having to include an inventory number?

Luckily this is super straight forward. All you need to do is disable “track quantity” when creating your products.
You can also setup products to “continue selling when out of stock” so Shopify will ignore inventory and just keep the product purchasable on your site.
BUT WAIT THERE’S MORE!
On your second notes about inventory at popups. You use the “publishing” section on the top right to control where your products are purchasable. So for pop-ups we usually have products with inventory only available on Point of Sale.

Yes, you can absolutely list all your variants (shape, design level, price) without having to add inventory numbers. For your main product, you can simply set the inventory to “Not tracked” in Shopify.
If you’d like, you can also use an app like Easify Product Options to let customers choose their shape, design level, and even leave a image/ comment box describing how they want their nails to look. It’s super handy for custom-made or made-to-order products like yours and dont affect the inventory!
