How to maintain SEO data while transitioning to a new eCommerce platform?

I’m carrying over an old website and putting it onto Shopify. We don’t want to lose SEO data on the product pages, but as the URL is going to change I can imagine we will do.

Is it wise to do some bulk redirects to those pages? I can imagine a site with a lot of redirects will cause more harm than good. What’s the rule of thumb with this sort of thing?
