On product pages like this shoes where it has a lots of sizes options I want to make dropdown menus for the variant picker, but in another pages I want to have it just regular visible variant options. How to create that?
This is very easy to set up but it takes a bit of preparation in order to make it methodical and efficient.

Go to Online Store-Theme-Customize. At the top center you will see the template type. This is where you need to create a new product template. So Click Products-Create Template-Name it something like Dropdown-based on Default Product Template. Now edit this new template to make your dropdown variant picker.

Go back to Admin-Products and select your product that you want to assign the Dropdown Template. In the bottom right corner, you can choose the template you want the product to be assigned to.
It’s that simple. Now you have 2 product templates. Default and Dropdown.

Do you want to show the dropdown for only one variant, or show the dropdown for all but only some products?

@namphan I want to be able to add the dropdown menu only on the “Sizes” picker and only to some products like this shoes on the screenshot for example. The reason is tha there are too many choices and it looks ugly with all this nubmers.
Thats definitely an option but not exactly what I am asking for. I want to be able to make dropdown menu only on the “Sizes” picker and not both on size and color.
It is possible with theme code modification.
Since your theme is a paid one, only few people has access to the code of your version of the theme.
Also consider that after editing theme code you lose easy theme version updates.
So, maybe suggestion of Maximus3 is not the worst one.

If you want an easier, no coding way to manage how variant pickers display, you could try a product options app. For example, with Easify Product Options, you can assign option sets to specific products — so on shoes you can show sizes in a dropdown, while on other products you keep them as visible buttons. This gives you flexibility to customize the look per product without much effort. Here’s how it works:
