I have one off products that have multiple options. My fountain ink pens have multiple nib options, but there is only one pen, I don’t have a pen for every nib option. When I add variants, it adds inventory. In other words, when one variants sell, I need all of the other ones to show sold out too. Thanks in advance.

Adding the options as variants will be counted to the inventory. You can add all the variants and set the quantity to zero to show that it is sold out. Only add quantity to the available option.
