Shopify offers a “Pause” and a “Pause and Build” plan.
The “Pause” plan fully disables your checkout and restricts access to your Shopify admin. You will not be billed for the Shopify subscription during the pause plan. You may be billed for any active apps that have recurring charges. The pause plan is only available to store owners who have had an active store for 60 consecutive days. To pause your store, you will need to pay for any outstanding charges. When you reactive the store, you will be billed for the monthly subscription.
The “Pause and Build” plan costs $9/month. It disables your checkout but provides access to the Shopify admin.

Shopify will bill your store every 30 days. If you choose the “Pause and Build” plan, then you will be credited a prorated amount for the difference from what you have already paid and how much time is left in your billing cycle.
If your intention is to avoid orders being placed, then you can password protect your store by going to Online Store/Preferences.
