I am working on our unpublished Shopify 2.0 theme while our current theme is live. How do I preview it outside of the Shopify preview window so I can see my CSS edits immediately in a full-sized browser window? I would also like to be able to use the code inspector on my draft site to check the styles that are applied to elements.

You can preview a theme outside of the Theme editor, which will allow you to use the browsers’ inspector tool. However, depending on what you’re trying to check on your new theme, you may want to consider publishing the theme for a quick inspection and enable the storefront password to prevent unwanted visitors temporarily.
