Hey, @Candle1 ! Welcome to Shopify Community!
You can set up your store to natively accept payments later by activating a manual payment method. Besides allowing you to arrange ways to receive the payment outside of your website (e.g. bank account transfer, cash on delivery), a manual payment method will let you send an invoice to your customers for them to complete a credit card payment whenever you prefer.
For this to be possible, note that you’ll also need to activate a credit card payment method alongside the manual payment method, as the invoice will prompt customers to go through your checkout. Customers will see all your payment methods at the checkout, but you can specify that they need to select the manual payment method when placing an order by adding a note in the Additional details section when you set it up. You can visit this page for a guide on how to activate a manual payment method.
Are you selling pre-orders? While the native setup for accepting payments later is a feasible solution for pre-orders, it’s not as seamless as using a pre-order app in your store. Pre-order apps have advanced functionality for customizing your payment terms and communicating them to your customers. If you would like to elevate the customer experience and order workflow on your website, I highly suggest looking into using an app. We have a selection of pre-order apps on this page however, we recommend the following:

Thank you,
Since we manufacture the product, we often have to send partial orders during our busy season. The manual payment method gives us 30 days, but that sometimes is not enough.
So, we need to be able not only to run the credit card when we complete an order but to run the card for fulfillment of a partial order (the customer understands that order will be filled at a later date).
We don’t do pre-orders. We often receive large orders that can take a few months to fill.
Thanks for providing some context on your situation, @Candle1 . In that case, you might wanna look into using a split payment app instead. I recommend checking out the following:
Since it’s not possible to natively accept partial payments through your online store right now, I’m happy to pass a suggestion on to our development team so we can consider this in our future roll-outs.
