I need my customer to have no other choice but to go to their cart to checkout. This is where the have to pick a deliver date and add a card message (I am a florist).
Whenever they add flowers to their cart (I already took off the checkout now button off the product page itself), a drop down menu appears that allows them to view their cart or “Check Out”. I either need the drop down menu to go away completely or for the only option to be “view cart”

You can remove dynamic checkout buttons on product pages:
From your Shopify admin, go to Online Store > Themes.
Find the theme that you want to edit, and then click Customize.
Open the drop-down menu at the top of the page.
Select Product pages.
Click the Product pages section.
Check or uncheck the Show dynamic checkout button.
Click Save.
