Can I ask how you solved the problem? When I look at the settings for payment methods, I see the section for manual payments, but no option to add a manual payment method.

When you disable the default payment methods you per default will need to send manual payment by invoice since there is no other way to take payments. How I did was just to disable all payment methods through settings
