Hey, I could only find a tutorial on how to remove the cart icon from your page on vintage themes. Is it possible to remove the cart icon from my store on a 2.0 theme (Taste)?

You mentioned that you are using the Taste theme and are looking to remove the cart icon from your page. Are you looking to remove this permanently or would like a chance to enable and disable the icon? I did however find a guide on our community on how to disable the cart from our Dawn Theme, This may be similar to the Taste theme as it is also an Online Store 2.0 theme so you may look to use this tutorial or use it as a reference point. Please be sure to provide a back up of your theme before making any changes however.
Since our current tutorials appear to be for vintage themes at the moment, you can look to reach out to our Themes team through our Help Center to see if this customization can be done on your behalf. For context, each paid Shopify account receives 60 minutes of design time from Shopify Theme Support. This design time can be used to add specific features to a theme.
