Check your Shopify settings to see if you have ShopPay configured in your payment methods anywhere. I would have thought if you didn’t have this configured, it would only show the default Buy Now button.

Otherwise. to remove this button completely, and just keep the add to cart button:

Go to your theme customizer (Online Store > Themes > Customize), go to the Product default template, click on the Buy Buttons block, untick the box which says “Show dynamic checkout buttons”. Save your changes.
