How to set a "limit one" per order on only select products

Hello,

I am using Debut theme and would like to set restrictions on specific products so that only one variant per order can be added to cart. Basically removing the quantity selector on specific products only. I would prefer to do so using code instead of an app if possible. Any help on this would be appreciated!
